This is a great mix for the perfect birthday cake for those who have celiac disease or is allergic and sensitive to gluten or wheat. This mix will make one 9-inch layer cake, 18 cupcakes, or 40-48 sugar cookies.

Cooking Directions

Cake

  1. Entire bag of Old Fashioned Cake & Cookie Mix
  2. 1/2 cup vegetable shortening, softened butter or margarine
  3. 2 large eggs, lightly beaten
  4. 1 tsp gluten-free vanilla
  5. 1/2 cup milk or water.
  6. Preheat oven to 350 degrees.
  7. Lightly oil or grease a 9 inch round cake pan or an 8 x 8 inch square pan.
  8. In large bowl, beat shortening or butter until fluffy.
  9. Add mix.
  10. Beat to combine.
  11. Add eggs and vanilla and beat.
  12. Add milk.
  13. Stir to moisten.
  14. Spoon into pan.
  15. Bake 28 minutes.
  16. Cool 10 min. then remove from pan.
  17. Cool completely, frost, and enjoy!

Sugar Cookies

  1. Entire bag of Old Fashioned Cake & Cookie Mix
  2. 4 tbsp vegetable shortening
  3. 4 tbsp softened butter or margarine
  4. 2 large eggs, lightly beaten or 1/2 cup pureed soft silken tofu
  5. 1 tsp gluten-free vanilla
  6. 2 tbsp sugar mixed with 1 tbsp cinnamon (for coating cookies).
  7. Preheat oven to 350 degrees.
  8. In large bowl beat shortening and butter until fluffy.
  9. Add mix.
  10. Beat to combine.
  11. Add eggs and vanilla and beat.
  12. Roll into 1 inch balls.
  13. Roll balls in sugar/cinnamon mix.
  14. Set 1 inch apart on lightly greased cookie sheets and bake 15 minutes.
  15. Remove and cool.
  16. Makes about 24 cookies

Coffee Cake

  1. Add 3/4 cup chopped, plain or sweet spicy coated nuts and 2 tsp cinnamon to basic cake recipe.
  2. Pour into an 8 x 8 inch square greased pan.
  3. Bake 28 min. in a 350 degree oven.
  4. Cool and serve.
