Mixing & Cooking Directions

What You Will Need:

  • Whole box of mix
  • 2 large eggs
  • 6 tablespoons of butter or 4 tablespoons of oil
  • 2 cups of milk

Note: For a dairy-free version; make with 4 tablespoons vegetable oil and 1 1/2 cups rice milk. Follow directions below.

Mixing:

  1. Whisk together the eggs, butter or vegetable oil, and milk.
  2. Whisk in the mix.
  3. Allow the batter to sit for 10 minutes to thicken.
Cooking:
  1. Preheat the griddle to medium (350°F).
  2. Scoop the batter by the 1/4-cupful onto lightly greased griddle.
  3. Cook for 1 to 2 minutes, our until bubbles form on tops of pancakes and bottoms are golden brown.
  4. Flip and cook for 1 to 2 minutes on other side.
  5. Serve hot, with butter and syrup.
  6. Yields sixteen 4″ pancakes.

Note: For half a batch of pancakes use 1 1/3 cups of mix, 1 egg, 1 cup of milk 2 tablespoons of oil or 3 tablespoons of butter.
